Ingredients
  

  • 1 nos Eggplant, Big / கத்தரிக்காய் பெரியது - cut into ½inch round slices
  • 1 tsp Red Chili powder / மிளகாய்த் தூள்
  • ½ tsp Turmeric powder / மஞ்சள் தூள்
  • 1 tsp Garam Masala powder
  • 1 tsp Mango powder, Dry
  • ½ cup Rice flour / அசிரி மாவு
  • ½ tsp Salt / உப்பு - adjust to your taste

for Frying

  • 200 ml Oil / எண்ணெய்

Instructions
 

  • Soak the sliced eggplant in salted water for 15-20min and pat dry in a kitchen towel
  • Add all the spice powder and salt and mix the slices well.
  • Allow it to marinate for 5~7min
  • Heat oil in a pan
  • Take rice flour in a plate, coat each slice with rice flour, dust off the extra rice flour
  • Pan fry the eggplant slices till crisp and golden brown on both sides
  • Serve hot with yogurt of with naan or rotis
