Kashmiri Veth Chaman
Ingredients
- 3 tbsp Garam Masala powder
- 2 tbsp Mustard oil / கடுகு எண்ணெய்
- ½ tsp Cumin seed / சீரகம்
- 1 inch Cinnamon stick / லவங்கப் பட்டை
- 6 nos Cloves / லவங்கம்
- ½ tsp Turmeric powder / மஞ்சள் தூள்
- ½ tsp Red Chili powder / மிளகாய்த் தூள்
- 1½ tsp Kashmiri Red Chili powder
- 2 tsp Ginger powder, Dry / சுக்குப் பொடி - powdered
- 2 tbsp Curd / தயிர் - whisked
- ½ cup Milk / பால்
- 3 nos Cardamom, Brown / ஏலக்காய்
- 3 nos Cardamom, Green / ஏலக்காய்
- 3 tsp Fennel seed / சோம்பு - powdered
- 1 tsp Salt / உப்பு - adjust to your taste
Instructions
- Boil the water and add asafoetida into it
- Heat mustard oil
- Fry paneer on both sides
- Transfer fried paneer into the hot water
- Heat remains of mustard oil after shallow frying paneer
- Add cumin seeds, cinnamon, cloves, turmeric powder, red chili powder, kashmiri chili powder, dry ginger powder and mix them well
- Add the hing water to de-glaze
- In the base mixture add curd, milk, brown cardamom, green cardamom, saunf powder and mix them well
- Add the fried paneer into the base mixture and then add the powdered garam masala to it
- Mix the paneer and garam masala well
- Cover it and let it cook in simmer for a 5min
- Serve hot with rotis
