Kashmiri Karela Yakhni
Ingredients
- 250 gm Bitter Gourd / பாகற் காய் - cut into thin slices
- ½ cup Yogurt / தயிர்
- 1 tsp Fennel powder / சோம்புத் தூள்
- ¼ tsp Ginger powder, Dry / சுக்குப் பொடி
- ¼ tsp Cumin seed / சீரகம்
- 1 tsp Salt / உப்பு - adjust to your taste
- 2 tbsp Mustard oil / கடுகு எண்ணெய்
- 1 bunch Coriander leaves, Fresh / கொத்தமல்லி
Instructions
- Heat oil in a frying pan
- Add bitter gourd, fry until golden, set aside
- Mix curd with fennel powder, dry ginger powder, salt, set aside
- Heat rest of oil in the same pan
- Add cumin, when it splutters, add curd mix, bitter gourd, cook on a low flame
- When contents start boiling, switch off the flame
- Garnish with coriander leaves
- Serve hot with rice
