Eggplant Penne with Tomato Onion and Garlic
Ingredients
- 400 gm Penne Pasta - cooked until al dente
- 500 gm Tomato / தக்காளி - diced
- 100 gm Onion / வெங்காயம் - finely chopped
- 10 – 15 pod Garlic / பூண்டு - smashed
- 250 gm Eggplant / கத்தரிக்காய் - cut circularly
- 2 tsp Black Pepper / மிளகு - powdered
- 50 ml Olive oil / ஆலிவ் எண்ணெய்
- 200 gm Cheese - grated
- 1 tsp Salt / உப்பு - adjust to your taste
Instructions
- Grind onion and tomato into a fine paste
- Heat Olive oil in a pan
- Sauté eggplant well until tender, keep aside
- Add garlic sauté well
- Add tomato onion puree and and cook well until it becomes thick paste
- Remove from the heat and stir in the grated cheese and add pepper
- Mix this with cooked penne
- Plate up the pasta and serve with the eggplant and little olive oil on top
