Aubergine Rolls with Bell Peppers and Zucchini

Ingredients
  

  • 1 nos Eggplant, Big / கத்தரிக்காய் பெரியது - sliced length wise
  • 1 nos Carrot / காரெட் - long and thinly cut
  • 1 nos Zucchini - long and thinly cut
  • 1 nos Bell Pepper / குடை மிளகாய் - de-seeded, long and thinly cut
  • 4 pod Garlic / பூண்டு - minced
  • 2 tsp Cumin seed / சீரகம் - coarsely ground
  • 2 tbsp Olive oil / ஆலிவ் எண்ணெய் - extra virgin
  • 1 tsp Salt / உப்பு - adjust to your taste
  • 1 tsp Black Pepper / மிளகு - coarsely ground
  • 1 nos Lemon / எலுமிச்சம் பழம் - sliced

Instructions
 

  • Brush olive oil over eggplant
  • Grill eggplant until soft and golden brown on both sides, allow it to cool
  • Lightly heat olive oil in a pan
  • Add garlic and sauté well
  • Add carrot, and sauté well until tender
  • Add zucchini, bell pepper, cumin and cook until crispy
  • Remove from heat
  • Season with salt and pepper powder, allow it to cool
  • Fill the vegetables over eggplant slices and roll them up such that the vegetables peep out a bit
  • Warm the rolls a little and serve with lemon slice
