Romesco Sauce
Ingredients
- 1 nos Capsicum, Red - roasted
- 1 nos Garlic / பூண்டு - smashed
- ½ cup Almond / பாதாம் - silvered n toasted
- ¼ cup Tomato puree / தக்காளி விழுது
- 2 tbsp Parsley leaves, Fresh - chopped
- 2 tbsp Sherry Vinegar
- 1 tsp Paprika - smoked
- ½ tsp Cayenne Pepper
- ½ cup Olive oil / ஆலிவ் எண்ணெய் - extra virgin
- 1 tsp Sea Salt - adjust to your taste
- 1 tsp Black Pepper / மிளகு - freshly ground
Instructions
- Pulse red bell pepper, garlic, almond, tomato purée, parsley, sherry vinegar, paprika, cayenne pepper in a food processor until finely chopped
- Add olive oil little by little and continue pulsing until smooth
- Season with salt and pepper
- Store in a dry bottle
