Butternut Squash Soup
Ingredients
- 250 gm Butternut Squash - cut into cubes
- 3 cup Vegetable Broth
- 1 tbsp Butter / வெண்ணெய்
- 1 tsp Black Pepper / மிளகு - freshly ground
- 1 tsp Salt / உப்பு - adjust to your taste
- 1 bunch Coriander leaves, Fresh / கொத்தமல்லி
- 4 tbsp Fresh Cream / க்ரீம்
Instructions
- Heat butter in a pan
- Add butternut squash and sauté well for 5min
- Add vegetable broth to it and bring to a boil
- Reduce heat and cook until butternut squash is tender
- Blend them in a blender and strain if required
- Add fresh cream
- Add salt, freshly ground pepper
- Garnish with coriander
- Serve hot along with bread croutons
