Ingredients
  

  • 250 gm Butternut Squash - cut into cubes
  • 3 cup Vegetable Broth
  • 1 tbsp Butter / வெண்ணெய்
  • 1 tsp Black Pepper / மிளகு - freshly ground
  • 1 tsp Salt / உப்பு - adjust to your taste
  • 1 bunch Coriander leaves, Fresh / கொத்தமல்லி
  • 4 tbsp Fresh Cream / க்ரீம்

Instructions
 

  • Heat butter in a pan
  • Add butternut squash and sauté well for 5min
  • Add vegetable broth to it and bring to a boil
  • Reduce heat and cook until butternut squash is tender
  • Blend them in a blender and strain if required
  • Add fresh cream
  • Add salt, freshly ground pepper
  • Garnish with coriander
  • Serve hot along with bread croutons
