Butternut Squash Thuvaiyal
Ingredients
- 1 cup Butternut Squash - flesh with out seeds
- 1 tbsp Urad Dhal / உளுத்தம் பருப்பு
- 1 tbsp Chana Dhal / கடலைப் பருப்பு
- 4 – 5 nos Red Chili, Dry / வற மிளகாய் - adjust to your spice level
- ½ inch ball Tamarind / புளி
- ½ tsp Salt / உப்பு - adjust to your taste
- 1 pinch Asafoetida / பெருங்காயம்
- 1 tsp Sesame Oil / நல்லெண்ணெய்
Instructions
- Heat oil in a pan
- Add urad dhal, channa dhal, red chili and fry them until golden brown, keep side
- In the same pan sauté flesh of pumpkin until soggy
- Add tamarind, asafoetida and fry a litle, allow it to cool
- Grind them in a mixer into a smooth paste
- Add Salt and mix well
- Serve along with dosa or rice
