Ingredients
  

for Masala

  • 1 tsp Oil / எண்ணெய்
  • 3 pod Garlic / பூண்டு
  • 1 tsp Urad Dhal / உளுத்தம் பருப்பு
  • 1 tsp Chana Dhal / கடலைப் பருப்பு
  • ¼ tsp Fenugreek seed / வெந்தயம்
  • 5 nos Red Chili, Dry / வற மிளகாய் - (adjust to your spice level)
  • 1 tbsp Black Pepper / மிளகு
  • 1 tsp Coriander seed / தனியா
  • 10 nos Curry leaves, Fresh / கருவேப்பிலை

for Tempering

  • 1 tbsp Ghee / நெய்
  • 1 tsp Mustard seed / கடுகு
  • 1 tsp Cumin seed / சீரகம்
  • 2 pinch Asafoetida / பெருங்காயம்
  • 5 nos Curry leaves, Fresh / கருவேப்பிலை

Instructions
 

Masala Preparation

  • Heat oil in a pan
  • Roast dry red chili, peppercorns, channa dhal, urad dhal, coriander seeds, fenugreek, garlic, half of the curry leaves until fragrant, keep aside, allow it to cool
  • Grind above into fine paste, keep aside

Kuzhambu Preparation

  • Heat sesame oil in a pan
  • Add crushed garlic, asafoetida, fry well
  • Add tamarind extract, salt, bring to a boil
  • Add ground paste, mix well, bring to a boil

Tempering

  • Heat Ghee in a pan
  • Add mustard, allow it to crackle
  • Add cumin seeds, fry a little
  • Add fresh curry leaves, asafoetida, fry a little
  • Mix it with the kuzhambu

Notes

Serve hot along with hot rice and Paruppu Thuvaiyal
