Pilaf (also known as pilav, pilau, plov, pulao, polu and palaw) is a dish in which rice is cooked in a seasoned broth. Pilaf can be made with meat, vegetables, herbs, dried fruits.  Although the word pilaf is is borrowed from turkish pilav there were mentions of rice and meat cooked together, and the word pulao or pallao is used to refer to the dish in ancient Sanskrit and Tamil works, such as Yagnavalkya Smriti. -Source: Wikipedia

Ingredients
  

  • 2 cup Basmati Rice / பாசுமதி அரிசி
  • ½ cup Coconut / தேங்காய் - grated
  • 2 nos Onion / வெங்காயம் - long cut
  • 2 nos Tomato / தக்காளி - finely chopped
  • 1 nos Potato / உருளைக் கிழங்கு
  • 1 no Carrot / காரெட்
  • 2 tbsp Green Peas, Fresh / பச்சைப் பட்டாணி
  • 1 cup Mint leaves, Fresh / புதீனா இலை
  • 5 – 6 nos Green Chili, Fresh / பச்சை மிளகாய்
  • 1 nos Red Chili, Dry / வற மிளகாய்
  • 8 – 10 pod Garlic / பூண்டு
  • 1 inch Ginger / இஞ்சி
  • 4 – 5 nos Cardamom, Green / ஏலக்காய்
  • 2 nos Cardamom, Black / ஏலக்காய்
  • 2 – 3 nos Cinnamon stick / லவங்கப் பட்டை
  • 2 nos Bay leaf, Dry
  • 1 inch Cinnamon stick / லவங்கப் பட்டை
  • 1 tsp Shahi Jeera
  • 2 tsp Salt / உப்பு - adjust to your taste
  • 2 tbsp Ghee / நெய்
  • 5 – 6 cup Water / தண்ணீர்

Instructions
 

  • Wash and soak basmati rice for about 20min and drain the water
  • Cut potato and carrot into ¾inch pieces
  • Grind coconut, garlic, ginger, mint , green chili, green cardamom, clove, cinnamon into a fine paste
  • Heat ghee in a pan
  • Add shahi cumin and allow it to splutter
  • Add bay leaves, black cardamom
  • Add onion and sauté till its raw smell goes off
  • Add the finely ground paste and sauté for 2~3 min
  • Add tomato and sauté
  • Add potato, carrot and green peas and sauté well
  • Add the rice and stir until rice changes to transparent color [do not burn/roast it]
  • Transfer this into a pressure cooker and add 5~6cups of water
  • You could open cook or cook in an electric cooker [do not pressure cook]
  • Garnish with little fresh mint leaves
  • Serve hot with raita

Notes

Variation
* If you have grill you could grill the cooked rice in a porcelain bowl, that will roast the top portion of rice
