Ingredients
  

  • 200 gm Ash Gourd / பூசணிக்காய் - peeled and cut into ½ x 1 long pieces
  • ½ cup Coconut Milk / தேங்காய்ப் பால் - diluted
  • ½ cup Coconut Milk / தேங்காய்ப் பால் - thick
  • 2 - 3 nos Green Chili, Fresh / பச்சை மிளகாய் - long slit
  • ½ cup Lobia - (Karamani)
  • 10 nos Curry leaves, Fresh / கருவேப்பிலை
  • 25 ml Coconut Oil / தேங்காய் எண்ணெய்
  • ½ tsp Salt / உப்பு - adjust to your taste

Instructions
 

  • Soak the lobia for 2hrs, pressure cook it
  • Cook the ash gourd along with salt until it becomes soft
  • Add cooked lobia, slit green chili, thin coconut milk, bring it to boil
  • Simmer the flame
  • Add thick coconut milk
  • Keep them in simmer for 1~2 min and switch off the flame
  • After 2~3min add coconut oil and curry leaves

Notes

Note:
* Add brown/black lobia, if possible, it will give a contrast look along with the transparent ash gourd and white coconut milk
