Ingredients
  

  • 1 cup Thoor dhal / துவரம் பருப்பு - cooked
  • 3 tsp Coriander seed / தனியா
  • 2 tsp Chana Dhal / கடலைப் பருப்பு
  • 6 nos Red Chili, Dry / வற மிளகாய் - adjust to your spice level
  • 1 tsp Fenugreek seed / வெந்தயம்
  • 1 nos Onion / வெங்காயம்
  • 10 – 15 nos Shallots
  • 1 nos Tomato / தக்காளி - cut
  • 2 cup Tamarind extract / புளிக் கரைசல்
  • 2 tbsp Coconut, Fresh / தேங்காய் - grated
  • 1 tsp Turmeric powder / மஞ்சள் தூள்
  • 1 inch Cinnamon stick / லவங்கப் பட்டை
  • 2 nos Cardamom, Green / ஏலக்காய்
  • 1 bunch Curry leaves, Fresh / கருவேப்பிலை
  • 1 bunch Coriander leaves, Fresh / கொத்தமல்லி - chopped
  • 1 tsp Mustard seed / கடுகு
  • 2 tsp Oil / எண்ணெய்
  • 1 tsp Salt / உப்பு - adjust to your taste

Instructions
 

  • Cook thoor dhall and turmeric powder with extra water and keep them aside
  • Fry chana dhal, dry red chili, coriander seed, fenugreek seeds, cinnamon, cardamom and onion
  • Grind this mixture with tomato and coconut
  • Fry small onion in a pan for few minutes, and cook this in the thoor dhal water with salt
  • After it is cooked, add tamarind extract and cook for a few minutes
  • Add the ground masala
  • After this is cooked add the cooked thoor dhal
  • Heat little oil in a pan, splutter mustard, curry leaves, asafoetida and add this to the sambhar
  • Garnish with coriander

Notes

Variation
* Instead of a small onion, you can use either or these: yam, ash gourd, eggplant, raw banana, pumpkin
* Use Ghee or Coconut oil for tempering mustard, which will elevate the sambhar’s flavor
