Ingredients
  

  • 500 gm Potato / உருளைக் கிழங்கு - cut into medium cubes
  • 2 nos Green Chili, Fresh / பச்சை மிளகாய்
  • 10 pod Garlic / பூண்டு
  • 1 inch Ginger / இஞ்சி
  • 1 tsp Coriander powder / மல்லித் தூள்
  • 1 tsp Cumin powder / சீரகத் தூள்
  • 1 tsp Red Chili powder / மிளகாய்த் தூள் - adjust to your spice level
  • 1 tsp Turmeric powder / மஞ்சள் தூள்
  • 1 pinch Asafoetida / பெருங்காயம்
  • 1 tsp Rock salt / கல்லுப்பு - adjust to your taste
  • 1 bunch Curry leaves, Fresh / கருவேப்பிலை
  • 1 tsp Mustard seed / கடுகு
  • 1 tsp Cumin seed / சீரகம்
  • 3 tbsp Oil / எண்ணெய்

Instructions
 

  • Pound green chili, garlic, ginger into a coarse mixture
  • Heat oil in a pan
  • Temper mustard seeds and allow it to splutter
  • Add cumin seeds and allow it to splutter
  • Add the pounded mixture and sauté well
  • Add curry leaves and fry until crispy
  • Add turmeric powder, coriander powder, cumin powder, red chili powder, asafoetida, rock salt and mix well
  • Add potato and mix well with the above masala and cook until tender in low flame
  • Stir the potatoes occasionally so that every piece will cook evenly
  • Allow the potato to roast
