Aubergine Rolls with Bell Peppers and Zucchini
Ingredients
- 1 nos Eggplant, Big / கத்தரிக்காய் பெரியது - sliced length wise
- 1 nos Carrot / காரெட் - long and thinly cut
- 1 nos Zucchini - long and thinly cut
- 1 nos Bell Pepper / குடை மிளகாய் - de-seeded, long and thinly cut
- 4 pod Garlic / பூண்டு - minced
- 2 tsp Cumin seed / சீரகம் - coarsely ground
- 2 tbsp Olive oil / ஆலிவ் எண்ணெய் - extra virgin
- 1 tsp Salt / உப்பு - adjust to your taste
- 1 tsp Black Pepper / மிளகு - coarsely ground
- 1 nos Lemon / எலுமிச்சம் பழம் - sliced
Instructions
- Brush olive oil over eggplant
- Grill eggplant until soft and golden brown on both sides, allow it to cool
- Lightly heat olive oil in a pan
- Add garlic and sauté well
- Add carrot, and sauté well until tender
- Add zucchini, bell pepper, cumin and cook until crispy
- Remove from heat
- Season with salt and pepper powder, allow it to cool
- Fill the vegetables over eggplant slices and roll them up such that the vegetables peep out a bit
- Warm the rolls a little and serve with lemon slice
