Batata nu Shaak

Ingredients
- 500 gm Potato / உருளைக் கிழங்கு - cut into medium cubes
- 2 nos Green Chili, Fresh / பச்சை மிளகாய்
- 10 pod Garlic / பூண்டு
- 1 inch Ginger / இஞ்சி
- 1 tsp Coriander powder / மல்லித் தூள்
- 1 tsp Cumin powder / சீரகத் தூள்
- 1 tsp Red Chili powder / மிளகாய்த் தூள் - adjust to your spice level
- 1 tsp Turmeric powder / மஞ்சள் தூள்
- 1 pinch Asafoetida / பெருங்காயம்
- 1 tsp Rock salt / கல்லுப்பு - adjust to your taste
- 1 bunch Curry leaves, Fresh / கருவேப்பிலை
- 1 tsp Mustard seed / கடுகு
- 1 tsp Cumin seed / சீரகம்
- 3 tbsp Oil / எண்ணெய்
Instructions
- Pound green chili, garlic, ginger into a coarse mixture
- Heat oil in a pan
- Temper mustard seeds and allow it to splutter
- Add cumin seeds and allow it to splutter
- Add the pounded mixture and sauté well
- Add curry leaves and fry until crispy
- Add turmeric powder, coriander powder, cumin powder, red chili powder, asafoetida, rock salt and mix well
- Add potato and mix well with the above masala and cook until tender in low flame
- Stir the potatoes occasionally so that every piece will cook evenly
- Allow the potato to roast
