Begun Bhaja
Ingredients
- 1 nos Eggplant, Big / கத்தரிக்காய் பெரியது - cut into ½inch round slices
- 1 tsp Red Chili powder / மிளகாய்த் தூள்
- ½ tsp Turmeric powder / மஞ்சள் தூள்
- 1 tsp Garam Masala powder
- 1 tsp Mango powder, Dry
- ½ cup Rice flour / அசிரி மாவு
- ½ tsp Salt / உப்பு - adjust to your taste
for Frying
- 200 ml Oil / எண்ணெய்
Instructions
- Soak the sliced eggplant in salted water for 15-20min and pat dry in a kitchen towel
- Add all the spice powder and salt and mix the slices well.
- Allow it to marinate for 5~7min
- Heat oil in a pan
- Take rice flour in a plate, coat each slice with rice flour, dust off the extra rice flour
- Pan fry the eggplant slices till crisp and golden brown on both sides
- Serve hot with yogurt of with naan or rotis
