Ingredients
  

  • 500 gm Okra / வெண்டைக் காய் - cut into 1inch pieces
  • 1 nos Onion / வெங்காயம் - chopped
  • 3 - 4 nos Garlic / பூண்டு - chopped
  • 2 nos Tomato / தக்காளி - chopped
  • 1 cup Tamarind extract / புளிக் கரைசல் - from gooseberry size
  • 3 nos Green Chili, Fresh / பச்சை மிளகாய் - slit, adjust to your spice level
  • 1 tsp Red Chili powder / மிளகாய்த் தூள்
  • 1 tsp Garam Masala powder
  • 1 tsp Turmeric powder / மஞ்சள் தூள்
  • 1 tsp Coriander powder / மல்லித் தூள்
  • 1 tsp Mango powder, Dry
  • ¼ cup Sour Curd / தயிர் புளித்தது
  • 1 tsp Salt / உப்பு
  • 1 bunch Curry leaves, Fresh / கருவேப்பிலை
  • 4 tbsp Oil / எண்ணெய்

Instructions
 

  • Heat 2tbsp of oil in a pan
  • Sauté garlic, then onion until they are translucent
  • Add tomato, sauté until mushy, allow it to cool
  • Blend with a hand blender into a relatively fine paste
  • Add red chili powder, garam masala, turmeric powder, coriander powder, amchur, tamarind extract, mix well
  • Allow it to cook
  • Meanwhile, heat rest of oil in a pan
  • Add green chili, fry them until color changes
  • Add curry leaves, fry a little
  • Add okra and stir fry them [important: do no close the pan]
  • Once color changes add them on to the onion tomato masala, mix well
  • Add sour curd, mix well
  • Bring the mixture into a boil, by now the bhindi masala should be relatively thick

Notes

Serve hot along with chapathi
