Cauliflower Soup
Ingredients
- 1 nos Cauliflower
- 1 tsp Butter / வெண்ணெய்
- 1 tsp Maida
- 4 cups Vegetable Broth
- 1 cup Milk / பால்
- ½ cup Cream
- 1 tsp Cheese
- ½ tsp Black Pepper / மிளகு - Freshly crushed
- 1 tsp Salt / உப்பு - adjust to your taste
Instructions
- Boil vegetables (beans, cabbage, carrots, peas etc.) in 6 cups of water for ½ an hour.
- Strain out and keep aside roughly making it to 4 cups.
- Melt the butter in a pan .
- Add maida and mix well .
- Slowly pour the vegetable stock, mixing the flour smoothly.
- Cook till the liquid thickens.
- Divide the cauliflower into sprigs.
- Add to the liquid.
- Cook till soft.
- Top with cream and serve.
- Cheese can be added just before serving.
