Chunky Soya Curry
Ingredients
- 1½ cup Soya Chunk
- 2 cup Fresh Thick Curd / கெட்டித் தயிர்
- ½ tsp Aniseed
- 1 bunch Curry leaves, Fresh / கருவேப்பிலை - finely chopped
- 1 bunch Coriander leaves, Fresh / கொத்தமல்லி - finely chopped
- 1½ tsp Coriander powder / மல்லித் தூள்
- 1 tsp Salt / உப்பு - adjust to your taste
- 1½ tsp Red Chili powder / மிளகாய்த் தூள் - adjust to your spice level
- ½ tsp Sugar, White / சர்க்கரை, வெள்ளை
- 1 tsp Garam Masala powder
- 500 ml Oil / எண்ணெய் - to fry
for Grinding
- 1 tbsp Oil / எண்ணெய்
- ½ cup Shallots - peeled
- 8 pod Garlic / பூண்டு
for Dry roasting
- 15 nos Cashew nut / முந்திரிப் பருப்பு
- 2 tbsp Coconut, Dry / தேங்காய் உலர்ந்தது
Instructions
- Heat 6 cups of water in large vessel
- When it starts boiling, add soya chunks and remove from fire
- Keep it closed for 10 minutes
- Strain water, squeeze chunks and repeat the same process (steps 1 – 4) once again. This process will remove the smell of soya chunks
- Fry onions, garlic in oil
- Dry roast cashews and dry coconut, grind all of them together to a smooth paste
- Heat oil in a frying pan
- When oil becomes hot, add aniseed, curry leaves and then ground paste
- Stir till oil separates from the ground paste
- Sprinkle coriander powder, chili powder, salt, sugar and garam masala powder
- Fry for another one minute and then pour whipped curds
- Cook till oil floats on top
- Add soya chunks with enough water and cook till gravy becomes thick
- Garnish with chopped coriander and curry leaves
- Serve hot
