Eggplant Penne with Tomato Onion and Garlic

Ingredients
  

  • 400 gm Penne Pasta - cooked until al dente
  • 500 gm Tomato / தக்காளி - diced
  • 100 gm Onion / வெங்காயம் - finely chopped
  • 10 – 15 pod Garlic / பூண்டு - smashed
  • 250 gm Eggplant / கத்தரிக்காய் - cut circularly
  • 2 tsp Black Pepper / மிளகு - powdered
  • 50 ml Olive oil / ஆலிவ் எண்ணெய்
  • 200 gm Cheese - grated
  • 1 tsp Salt / உப்பு - adjust to your taste

Instructions
 

  • Grind onion and tomato into a fine paste
  • Heat Olive oil in a pan
  • Sauté eggplant well until tender, keep aside
  • Add garlic sauté well
  • Add tomato onion puree and and cook well until it becomes thick paste
  • Remove from the heat and stir in the grated cheese and add pepper
  • Mix this with cooked penne
  • Plate up the pasta and serve with the eggplant and little olive oil on top
