Garlic Thokku
Ingredients
- 250 gm Garlic / பூண்டு - peeled
- 100 gm Tamarind extract / புளிக் கரைசல்
- 5 tsp Red Chili powder / மிளகாய்த் தூள் - adjust to your spice level
- 2 tsp Fenugreek powder / வெந்தையப் பொடி
- 1 pinch Asafoetida / பெருங்காயம் - 1pinch
- 1 bunch Curry leaves, Fresh / கருவேப்பிலை
- 2 tsp Salt / உப்பு - adjust to your taste
- 200 ml Sesame Oil / நல்லெண்ணெய்
- 2 tsp Mustard seed / கடுகு
- 50 gm Jaggery / வெல்லம் - grated, optional
Instructions
- Heat little oil in a pan
- Sauté about ⅔of garlic well
- Allow it to cool, grind into a coarse paste
- Add mustard, allow it to splutter
- Add curry leaves fry a bit
- Add rest of garlic and sauté well
- Add ground garlic and cook until the raw smell goes away
- Add tamarind extract
- Simmer the flame, cook until the paste thickens
- Add sesame oil little by little, stop adding oil when the mix stops absorbing the oil
- Add red chili powder, fenugreek powder, asafoetida, salt, mix well
- Add jaggery, mix well until it dissolves
- Switch off the flame, allow the mix to cool
- Store in an airtight container
Notes
Serve along with roti, dosai, rice
