Ingredients
  

  • 250 gm Garlic / பூண்டு - peeled
  • 100 gm Tamarind extract / புளிக் கரைசல்
  • 5 tsp Red Chili powder / மிளகாய்த் தூள் - adjust to your spice level
  • 2 tsp Fenugreek powder / வெந்தையப் பொடி
  • 1 pinch Asafoetida / பெருங்காயம் - 1pinch
  • 1 bunch Curry leaves, Fresh / கருவேப்பிலை
  • 2 tsp Salt / உப்பு - adjust to your taste
  • 200 ml Sesame Oil / நல்லெண்ணெய்
  • 2 tsp Mustard seed / கடுகு
  • 50 gm Jaggery / வெல்லம் - grated, optional

Instructions
 

  • Heat little oil in a pan
  • Sauté about ⅔of garlic well
  • Allow it to cool, grind into a coarse paste
  • Add mustard, allow it to splutter
  • Add curry leaves fry a bit
  • Add rest of garlic and sauté well
  • Add ground garlic and cook until the raw smell goes away
  • Add tamarind extract
  • Simmer the flame, cook until the paste thickens
  • Add sesame oil little by little, stop adding oil when the mix stops absorbing the oil
  • Add red chili powder, fenugreek powder, asafoetida, salt, mix well
  • Add jaggery, mix well until it dissolves
  • Switch off the flame, allow the mix to cool
  • Store in an airtight container

Notes

Serve along with roti, dosai, rice
