Ingredients
  

  • 1 nos Eggplant, Big / கத்தரிக்காய் பெரியது
  • 10 – 15 nos Shallots - peeled
  • ½ cup Tamarind extract / புளிக் கரைசல்
  • 2 tsp Sambar Masala powder
  • 1 tbsp Chana Dhal / கடலைப் பருப்பு
  • 1 tsp Turmeric powder / மஞ்சள் தூள்
  • 1 tbsp Coriander seed / தனியா
  • 5 nos Red Chili, Dry / வற மிளகாய் - adjust to your spice level
  • 1 nos Green Chili, Fresh / பச்சை மிளகாய்
  • 1 tsp Mustard seed / கடுகு
  • 1 tsp Salt / உப்பு - adjust to your taste
  • 1 pinch Asafoetida / பெருங்காயம்
  • 2 tbsp Sesame Oil / நல்லெண்ணெய்
  • 1 bunch Coriander leaves, Fresh / கொத்தமல்லி - chopped
  • 1 bunch Curry leaves, Fresh / கருவேப்பிலை

Instructions
 

  • Grill the eggplant on open flame [caution: do not char it]
  • Heat 1tsp of oil in a pan
  • Add chana dhal, coriander seeds, red chili and roast until golden brown
  • Grind the above into a fine powder and keep it aside
  • Peel off the skin and wash well so that smoke smell goes off
  • Grind the grilled eggplant in a mixer into a coarse paste
  • Heat 1tbsp oil in a pan
  • Fry green chilli and keep aside
  • Add small onion shallots and roast until golden brown
  • Add tamarind extract
  • Add sambar powder, turmeric powder, salt, asafoetida
  • Let it boil for 5min
  • Add the ground powder and mix well
  • Add the ground eggplant and mix well
  • If the mixture is too thick add some water
  • Allow it to boil for 5min
  • Add remaining oil and garnish with fried green chilli, curry leaves and coriander leaves
  • Serve hot with pongal or idli or dosa
