Kidney Beans Soup
Ingredients
- 200 gm Kidney beans - soaked for 6~8hours
- 2 nos Onion / வெங்காயம் - diced
- 5 nos Garlic / பூண்டு - chopped
- 3 nos Tomato / தக்காளி - chopped
- 1 inch piece Ginger / இஞ்சி - chopped
- 2 nos Green Chili, Fresh / பச்சை மிளகாய் - adjust to your spice level
- 100 ml Fresh Cream / க்ரீம்
- 2 tbsp Lemon juice / எலுமிச்சை சாறு
- 1 tsp Salt / உப்பு - adjust to your taste
- 1 tsp Black Pepper / மிளகு - freshly crushed
- 4 cups Vegetable Broth
- 1 bunch Coriander leaves, Fresh / கொத்தமல்லி - chopped
Instructions
- Drain kidney beans, discard the liquid
- Pressure cook red beans, tomato, onion, garlic, green chili and allow it to cool
- Grind the above with a blender into smooth pulp and strain it to remove any lumps/skins
- Add fresh cream and reheat
- Add lime juice, salt and mix well
- Garnish and season with fresh coriander leaves and pepper powder
- Serve hot with bread croutons
