Medhu vadai or Ulundhu vadai(Tamil), Uddina vade (Kannada ಉದ್ದಿನ ವಡೆ), Malayalam: ഉഴുന്നു വട Uzhunnu vada, Tamil: ulundhu vadai), Medhu vadai, made with Urad dal (black gram) flour. Ingredients
  

  • 1 cup Urad Dhal / உளுத்தம் பருப்பு
  • 1 tsp Salt / உப்பு - adjust to taste
  • 500 ml Oil / எண்ணெய் - to fry

Instructions
 

  • Soak urad dhal for 2~3hrs
  • Grind it into a smooth paste with as less water as possible
  • Add salt and mix well
  • Take a handful of batter in a butter paper and make a ball and flatten it by gently pressing downwards
  • Make a hole in the center and fry it in hot oil in medium flame
  • Turn the sides and fry well until it turns golden brown
  • Serve hot with coconut chutney, sambar

Notes

Variations
  • Use soda water for grinding that gives additional crispness to vada
