Medu Vadai
Medhu vadai or Ulundhu vadai(Tamil), Uddina vade (Kannada ಉದ್ದಿನ ವಡೆ), Malayalam: ഉഴുന്നു വട Uzhunnu vada, Tamil: ulundhu vadai), Medhu vadai, made with Urad dal (black gram) flour. This vadai is shaped like a doughnut, with a hole in the middle (i.e. an approximate torus). It is the most common vadai type throughout North and South India. -Source: Wikipedia
Ingredients
- 1 cup Urad Dhal / உளுத்தம் பருப்பு
- 1 tsp Salt / உப்பு - adjust to taste
- 500 ml Oil / எண்ணெய் - to fry
Instructions
- Soak urad dhal for 2~3hrs
- Grind it into a smooth paste with as less water as possible
- Add salt and mix well
- Take a handful of batter in a butter paper and make a ball and flatten it by gently pressing downwards
- Make a hole in the center and fry it in hot oil in medium flame
- Turn the sides and fry well until it turns golden brown
- Serve hot with coconut chutney, sambar

Variations
- Use soda water for grinding that gives additional crispness to vada
