Stuffed Baingan (Maharashtrian Style)
Ingredients
- 12 nos Eggplant / கத்தரிக்காய் - slit from bottom keeping the top portion intact
- 2 cup Peanut / வேர்க் கடலை
- 2 tbsp Sesame seed, Black / எள்ளு, கருப்பு
- 2 tsp Goda Masala powder
- 1 tsp Red Chili powder / மிளகாய்த் தூள் - adjust to your spice level
- 1 tsp Coriander powder / மல்லித் தூள்
- 1 tsp Cumin powder / சீரகத் தூள்
- 1 tsp Turmeric powder / மஞ்சள் தூள்
- 250 ml Sesame Oil / நல்லெண்ணெய்
- 1 tsp Salt / உப்பு - adjust to your taste
- 1 bunch Coriander leaves, Fresh / கொத்தமல்லி - 1bunch
Instructions
- Grind peanuts, sesame into fine powder
- In a bowl mix ground peanuts, sesame, salt, goda masala, red chili powder, coriander powder, cumin powder, turmeric powder along with little oil into thick paste
- Stuff the above paste in each of eggplants
- Heat oil in a heavy bottomed pan
- Line up stuffed eggplants and shallow fry them in low flame
- Turn them around occasionally so that eggplants fry evenly on all sides
- Mix water, chopped coriander leaves on the remaining masala paste
- Once all sides are fried well, pour the masala liquid
- Cook closed for about 10~15min in low flame
- Garnish coriander over

Serve hot along with rice or roti
