Uppuma Kozhukattai (aka pidi kozhukattai) is a typical healthy South Indian snack. There are several variations for this, but traditionally done only with raw rice rava.

Ingredients
  

  • 1 cup Rice, raw / பச்சரிசி
  • ½ cup Oats
  • ½ cup Corn Rava
  • ½ cup Wheat Rava
  • ½ cup Foxtail Millet
  • 2 nos Red Chili, Dry / வற மிளகாய்
  • 2 nos Green Chili, Fresh / பச்சை மிளகாய்
  • 1 tsp Mustard seed / கடுகு
  • 1 tsp Chana Dhal / கடலைப் பருப்பு
  • 1 tsp Urad Dhal / உளுத்தம் பருப்பு
  • 2 – 3 tsp Oil / எண்ணெய்
  • 1 bunch Curry leaves, Fresh / கருவேப்பிலை
  • 6 – 7 cups Water / தண்ணீர்
  • 2 tsp Salt / உப்பு - adjust to your taste
  • 1 pinch Asafoetida / பெருங்காயம்

Instructions
 

  • Grind rice, oats and foxtail millet into coarse rava
  • Mix above rava, wheat rava, corn rava well
  • Heat oil in a pan
  • Add mustard and let it splutter
  • Add channa and urad dhal and fry well
  • Add curry leaves, asafoetida
  • Add water and allow it to boil
  • When water boils, add the mix little by little and stir well continuously such that no lumps are formed
  • Close the pan with a lid and cook well in simmer flame
  • Let the above cool for 10min
  • Now make small balls and arrange in an Idli making plates and steam like idli for 10~12min
  • Serve hot with coconut chutney and/or onion tomato chutney

Notes

Variation
* Boiled rice could be used
* Grated coconut  could be used while seasoning
