Ingredients
  

  • 2 nos Banana, raw / வாழைக் காய்
  • 4 nos Garlic / பூண்டு
  • 1 inch Ginger / இஞ்சி
  • 1 nos Green Chili, Fresh / பச்சை மிளகாய் - adjust to your spice level
  • 1 bunch Curry leaves, Fresh / கருவேப்பிலை
  • tsp Fennel seed / சோம்பு
  • 1 tsp Turmeric powder / மஞ்சள் தூள்
  • 2 tsp Red Chili powder / மிளகாய்த் தூள் - adjust to your spice level
  • 1 tsp Garam Masala powder
  • 1 tsp Coriander powder / மல்லித் தூள்
  • 4 tbsp Oil / எண்ணெய்
  • 1 tsp Urad Dhal / உளுத்தம் பருப்பு
  • 1 tsp Mango powder, Dry
  • 1 pinch Asafoetida / பெருங்காயம்
  • 1 tsp Salt / உப்பு - adjust to your taste

Instructions
 

  • Peel raw banana, cut them into long pieces say about 2inch long and 1⁄2inch thick
  • Pressure cook with as minimum water as possible for just 1 whistle
  • Release the pressure immediately, so that banana will not be overcooked
  • Mix turmeric powder, red chili powder, salt, coriander powder, garam masala powder, amchur
  • Marinate for about 10min
  • Grind garlic, ginger, 1tsp of fennel, green chili, little curry leaf into a coarse powder
  • Heat oil in a pan
  • Add rest of fennel seeds, urad dhal, asafoetida, curry leaves
  • Fry well until urad dhal is golden brown
  • Add the ground paste and sauté well until raw smell goes off
  • Add marinated banana, toss well so that fried paste coats well over evenly
  • Close cook for 10~15min in low, medium flame
  • Stir well intermittently, but careful not to break the banana
  • Switch off flame

Notes

Serve hot along with any rice
