Veggie Frankie
Ingredients
- 8 nos Tortillas
- 1 nos Carrot / காரெட் - grated
- 1 nos Beetroot - grated (optional)
- 1 nos Potato / உருளைக் கிழங்கு - grated
- ½ cup Green Peas, Fresh / பச்சைப் பட்டாணி
- 1 nos Onion / வெங்காயம் - cut lengthwise
- 1 nos Capsicum / குடை மிளகாய் - cut lengthwise
- 1 tsp Ginger / இஞ்சி - paste
- 1 tsp Garlic / பூண்டு - paste
- 1 tbsp Oil / எண்ணெய்
- 50 gm Butter / வெண்ணெய்
- 2 inch cube Paneer - grated
- 2 tbsp Jalapeño - sliced
- 1 tsp Red Chili powder / மிளகாய்த் தூள்
- 1 tsp Salt / உப்பு - adjust to your taste
Instructions
- Heat oil in a pan
- Fry ginger, garlic paste
- Add onion and fry until transparent
- Add potato, carrot, beetroot, green peas, capsicum and sauté well
- Add red chili powder, paneer, salt, little water and mix well and cook till all water evaporates
- Allow it to cool
- Spread the veggie mix, little jalapeño over the tortilla and fold it such that veggie mix does not spill out
- Heat a pan and toast the folded tortillas by brushing butter over it
- Cook until the color turns golden brown
- Serve hot with tomato ketchup
