Athirasam
Ingredients
- 1 cup Rice, raw / பச்சரிசி
- ¾ cup Jaggery / வெல்லம் - grated
- 2 nos Cardamom, Green / ஏலக்காய் - powdered
- 2 tsp Sesame seed, White / எள்ளு, வெள்ளை - optional
- 500 ml Oil / எண்ணெய்
Instructions
- Soak rice for about 1hr and dry it over a cloth
- Grind it into a smooth flour, sieve it if required
- Meanwhile, dissolve jaggery in ½cup of water and boil it
- Filter it to remove impurities
- Further boil the jaggery water to get to a consistency where you can make a ball when a drop of syrup is dropped into water
- Mix the syrup with rice flour, cardamom powder, white sesame and make into a dough
- Allow it to rest for 4~5hrs
- Take little dough, make it a ball and spread it over a banana leaf greased with oil into 2~2½inch circles
- Fry it in oil in low flameAthirasam
