Thai Green Curry
Ingredients
For Curry
- 1 nos Carrot / காரெட் - chopped
- 1 nos Potato / உருளைக் கிழங்கு - chopped
- 1 nos Cauliflower - cut into flowerets
- ½ cup French Beans, Fresh - long sliced
- 4 nos Baby Corn - sliced
- 1 cup Coconut Milk, thick
- 2 cup Vegetable Broth
- 1 tsp Salt / உப்பு - adjust to your taste
- 2 nos Lime leaves - chopped
- 2 nos Thai basil - chopped
- 2 tbsp Coconut Oil / தேங்காய் எண்ணெய்
For Green curry paste
- 3 nos Red Chili, Fresh
- ½ inch Ginger / இஞ்சி
- 3 – 4 nos Shallots
- ½ cup Coriander leaves, Fresh / கொத்தமல்லி - chopped
- 2 nos Lemon Grass Stalks - chopped
- 1 tsp Cumin seed / சீரகம்
- ½ tbsp Coriander seed / தனியா
- ¼ tsp Black Pepper / மிளகு
- 1 tbsp Dark Soy sauce
- ½ tsp Lemon Zest
Instructions
- Grind all ingredients for green curry paste along with soya sauce and little water
- Boil/steam all vegetables for curry an keep aside, do not overcook the vegetables
- Heat oil in a pan
- Add the ground paste and sauté well for 2~3min
- Add half of coconut milk and add little water and mix with the paste
- Add vegetable broth, cooked vegetables, mix well and allow it boil then simmer for about 10min
- Add remaining coconut milk and cook for additional 5min
- Garnish with lime leaves and thai basil
- Serve hot with any rice item
