Ingredients
  

  • 40 nos Puri
  • 2 nos Onion / வெங்காயம் - finely chopped
  • 1 bunch Coriander leaves, Fresh / கொத்தமல்லி - finely chopped

for Spicy Water

  • 1 cup Mint leaves, Fresh / புதீனா இலை
  • 1 cup Coriander leaves, Fresh / கொத்தமல்லி
  • ½ inch Ginger / இஞ்சி
  • 2 nos Lemon / எலுமிச்சம் பழம் - juice
  • 3 nos Green Chili, Fresh / பச்சை மிளகாய்
  • ½ tsp Black Pepper / மிளகு
  • 1 tsp Fennel seed / சோம்பு
  • 1 pinch Black Salt
  • ½ tsp Salt / உப்பு
  • 2 cup Water / தண்ணீர்

for Sweet Chutney

  • 1 cup Dates / பேரீச்சம் பழம்
  • ½ cup Tamarind extract / புளிக் கரைசல்
  • ½ tsp Red Chili powder / மிளகாய்த் தூள்
  • ½ cup Jaggery / வெல்லம்
  • 1 tsp Fennel seed / சோம்பு
  • 1 tsp Cumin seed / சீரகம்
  • 1 tsp Garam Masala powder
  • 1 pinch Black Salt
  • ½ tsp Salt / உப்பு
  • 1 cup Water / தண்ணீர்

for Spice powder mix

  • 1 tsp Red Chili powder / மிளகாய்த் தூள்
  • 1 tsp Coriander powder / மல்லித் தூள்
  • 1 tsp Mango powder, Dry
  • 1 tsp Cumin powder / சீரகத் தூள்
  • 1 tsp Chaat Masala
  • 1 pinch Black Salt
  • ½ tsp Salt / உப்பு

for Stuffing

  • 3 nos Potato / உருளைக் கிழங்கு - boiled, peeled and chopped
  • 1 cup Moong sprouts - boiled

Instructions
 

for Spicy water

  • Grind mint leaves, coriander leaves, green chilli, ginger, black peppercorn fennel seed, cumin into fine paste
  • Add black salt, salt, lemon juice and mix well
  • Add water

for Sweet Chutney

  • Pressure cook tamarind extract and dates with little water, allow it to cool
  • Grind tamarind, dates, red chilli powder, jaggery, fennel seed, cumin, garam masala into a smooth paste
  • Heat a pan and add above paste, black salt, salt and add water
  • Cook until the paste thickens
  • Allow it to cool

for Stuffing

  • Mix potato and moong sprouts well in a bowl
  • Mix red chilli powder, coriander powder, amchur, cumin powder, chat masala, black salt, salt in a bowl

Serving Pani Puri

  • Punch the pani puri over thiner surface to make a hole
  • Add stuffing, spices, chopped onion [adjust spice level according to your taste]
  • Pour spoonful of sweet chutney
  • Fill puri with spicy water
  • Just eat the pani puri with one shot immediately else it will become soggy
