Purple Yam Fry
Ingredients
- 500 gm Purple Yam / காவத்து - peeled n cut into small pieces
- 1 tsp Turmeric powder / மஞ்சள் தூள்
- 1 tsp Red Chili powder / மிளகாய்த் தூள் - adjust to your spice level
- 1 tsp Garam Masala powder
- 25 ml Oil / எண்ணெய்
- 1 tsp Salt / உப்பு - adjust to your taste
- 1 tsp Mustard seed / கடுகு
- 1 bunch Curry leaves, Fresh / கருவேப்பிலை
- 1 tbsp Besan flour / கடலை மாவு
- 1 pinch Asafoetida / பெருங்காயம்
Instructions
- Heat oil in a pan
- Temper mustard and fry curry leaves
- Add asafoetida, turmeric powder, red chili powder and fry a little
- Add the cut purple yam and mix well
- Sprinkle salt, garam masala powder over it and allow it to cook in low flame until yam turns tender
- Make a thin paste of besan
- Add mix and cook well
- Allow the yam to roast
- Serve hot with rice
