Ingredients
  

  • 500 gm Potato / உருளைக் கிழங்கு - long thinly cut
  • 2 tsp Red Chili powder / மிளகாய்த் தூள் - adjust to your spice level
  • 1 tsp Mustard seed / கடுகு
  • 1 tsp Chana Dhal / கடலைப் பருப்பு
  • 1 tsp Urad Dhal / உளுத்தம் பருப்பு
  • 1 pinch Asafoetida / பெருங்காயம்
  • 1 tsp Turmeric powder / மஞ்சள் தூள்
  • 1 tsp Garam Masala powder - optional
  • 2 tbsp Sesame Oil / நல்லெண்ணெய்
  • 1 tsp Salt / உப்பு - adjust to your taste
  • 1 bunch Curry leaves, Fresh / கருவேப்பிலை

Instructions
 

  • Heat oil in a pan
  • Add mustard and allow it to splutter
  • Add channa dhal and urad dhal and fry well until golden brown
  • Simmer the flame
  • Add turmeric powder, red chili powder, curry leaves and fry for few seconds
  • Add potato little by little and mix well
  • Allow the potato to cook well
  • Add asafoetida, garam masala(optional) and mix well
  • Allow the potato to roast at bottom
  • Turn the potato if you want to roast on all sides
  • Serve hot with any rice items
