Heat oil in a pan
Add mustard and allow it to splutter
Add channa dhal and urad dhal and fry well until golden brown
Simmer the flame
Add turmeric powder, red chili powder, curry leaves and fry for few seconds
Add potato little by little and mix well
Allow the potato to cook well
Add asafoetida, garam masala(optional) and mix well
Allow the potato to roast at bottom
Turn the potato if you want to roast on all sides
Serve hot with any rice items
