Ukkarai
Ingredients
- 1 cup Chana Dhal / கடலைப் பருப்பு
- 1 cup Coconut, Fresh / தேங்காய் - grated
- 1 cup Jaggery / வெல்லம் - grated
- 1 nos Cardamom, Green / ஏலக்காய் - powdered
- 10 nos Cashew nut / முந்திரிப் பருப்பு - broken into half
- 10 nos Raisin
- 2 tbsp Ghee / நெய்
Instructions
- Dry Roast channa dhal for 2~3min
- Soak it for 2~3hours
- Grind it into fine paste with out adding water
- Steam it for about 10min by flattening it as much as possible
- Allow it to cool and crumble it up
- Add coconut to it and mix well
- Heat ghee in a pan
- Roast cashew nut, raisins until golden brown, keep aside
- Dissolve jaggery in little water in a pan
- Heat it over low flame, stir continuously until it gets one string consistency
- Add the channa dhal mix little by little and stir well for about 10min until it gets to crumbled consistency
- Add cardamom powder and mix well
- Add hot ghee little by little
- Add roasted cashew nuts and mix well
Notes
Variation:
You can add rice flour and/or sooji to get a crispy or dry consistency
