Ingredients
  

  • 500 gm Eggplant / கத்தரிக்காய் - chopped
  • 1 cup Chana Dhal / கடலைப் பருப்பு - soaked for 20min
  • 2 tsp Sambar Masala powder
  • 1 lemon size Tamarind extract / புளிக் கரைசல்
  • 1 pinch Asafoetida / பெருங்காயம்
  • 2 tsp Coriander seed / தனியா
  • 2 tsp Chana Dhal / கடலைப் பருப்பு
  • 5 nos Red Chili, Dry / வற மிளகாய் - adjust to your spice level
  • ½ cup Coconut, Fresh / தேங்காய் - grated
  • 1 tsp Salt / உப்பு - adjust to your taste
  • 2 tbsp Sesame Oil / நல்லெண்ணெய்
  • 1 tsp Mustard seed / கடுகு
  • 1 tsp Urad Dhal / உளுத்தம் பருப்பு
  • 1 bunch Curry leaves, Fresh / கருவேப்பிலை
  • 1 bunch Coriander leaves, Fresh / கொத்தமல்லி
  • 1 tsp Turmeric powder / மஞ்சள் தூள்

Instructions
 

  • Mix eggplant, channa dhal, sambar powder, turmeric powder in pressure pan
  • Pressure cook for 1~2 whistles
  • Heat little oil in a pan
  • Add coriander seeds, chana dhal, dry red chili, coconut, asafoetida and fry well
  • Once cooled, grind it into a fine paste along with tamarind
  • Mix this along with cooked eggplant
  • Add little water, bring to a boil
  • Add salt, mix well
  • Heat rest of oil in a pan
  • Add mustard allow to splutter
  • Add channa dhal, urad dhal, curry leaves, fry well
  • Garnish with coriander leaves

Notes

Serve hot with rice along with ghee
