Stuffed (Leftover) Rice
Ingredients
- 2 nos Bell Pepper / குடை மிளகாய் - cut into half
- 1 cup Left over Rice
- 1 nos Onion / வெங்காயம் - chopped
- 3 nos Garlic / பூண்டு - chopped
- 1 tsp Green Chili, Fresh / பச்சை மிளகாய் - chopped
- 1 bunch Curry leaves, Fresh / கருவேப்பிலை
- 2 tbsp Pumpkin seeds - peeled n crushed
- 1 tbsp Cashew nut / முந்திரிப் பருப்பு - crushed
- 4 tbsp Olive oil / ஆலிவ் எண்ணெய்
- 1 tsp All Spice powder
- 1 tsp Garam Masala powder
- 1 tsp Salt / உப்பு - , adjust to your taste
Instructions
- Heat oil in a pan
- Add garlic, sauté well
- Add onion, sauté well
- Add green chili, curry leaves, fry well
- Add pumpkin seeds, cashew nuts, allspice, garam masala, salt, mix well
- Finally, add leftover rice, mix well
- Pre-heat oven to 200°C
- Grease bell pepper with olive oil
- Fill the rice mix tightly
- Wrap with aluminium foil, bake for 20min
- Remove aluminium foil, bake for another 15~20min
