Ingredients
  

  • 2 cup Basmati Rice / பாசுமதி அரிசி - soaked for 20min
  • 1 nos Onion / வெங்காயம் - thinly sliced
  • 2 nos Garlic / பூண்டு - crushed
  • ½ inch Ginger / இஞ்சி - crushed
  • 2 nos Green Chili, Fresh / பச்சை மிளகாய் - slit, adjust to your spice level
  • 4 nos Baby corn - slit
  • ¼ cup Carrot / காரெட் - diced
  • ¼ cup Green Peas, Fresh / பச்சைப் பட்டாணி
  • 1 bunch Curry leaves, Fresh / கருவேப்பிலை
  • 2-3 nos Cloves / லவங்கம்
  • 1-2 nos Cardamom, Green / ஏலக்காய்
  • 1 inch Cinnamon stick / லவங்கப் பட்டை
  • 1 strand Mace
  • 1 tsp Cumin seed / சீரகம்
  • 1 cup Coconut Milk / தேங்காய்ப் பால் - thick
  • 2 tbsp Coconut Oil / தேங்காய் எண்ணெய்
  • 50 gm Butter / வெண்ணெய்
  • 1 bunch Coriander leaves, Fresh / கொத்தமல்லி
  • 1 tsp Salt / உப்பு - adjust to your taste

Instructions
 

  • Heat butter in a pan
  • Add cumin, cloves, cardamom, cinnamon, mace, sauté well until fragrant
  • Add onion, sauté until translucent
  • Add ginger, garlic, sauté for 1 ~ 2 min
  • Add curry leaves, baby corn, carrot, green peas, sauté well until tender
  • Add rice, gently mix along with veggies and spices
  • Add coconut milk, water, salt
  • Cook the rice in a pressure cooker or electric cooker
  • Add coconut oil and mix well
  • Garnish with coriander leaves

Notes

Serve hot along with raita
