Bhindi Crispy Curry
Ingredients
- 500 gm Okra / வெண்டைக் காய் - sliced lengthwise
- 2 nos Green Chili, Fresh / பச்சை மிளகாய் - sliced legthwise
- 2 tbsp Besan flour / கடலை மாவு
- 3 tbsp Sesame Oil / நல்லெண்ணெய்
- 1 tsp Turmeric powder / மஞ்சள் தூள்
- 1 tsp Garam Masala powder
- 1 pinch Asafoetida / பெருங்காயம்
- 1 tsp Salt / உப்பு - adjust to your taste
- 1 tsp Mustard seed / கடுகு
Instructions
- Heat oil in a pan
- Add mustard and allow it to splutter
- Add green chili, fry a little
- Add turmeric powder, asafoetida
- Add bhindi, mix well
- Slow cook, allow it to fry, mix them thoroughly every now and then so that all bhindi are cooked/fried evenly
- Once the bhindi loses the mushy texture, and edges start turning brown add salt, mix well
- Once bhindi reaches crispy texture, add besan, garam masala, mix well

Serve hot with rice or roti item
