Asparagus Thuvaiyal
Ingredients
- 100 gm Asparagus - cleaned & chopped
- 2 tbsp Chana Dhal / கடலைப் பருப்பு
- 2 tsp Urad Dhal / உளுத்தம் பருப்பு
- 1 nos Red Chili, Dry / வற மிளகாய் - (optional)
- 2 nos Green Chili, Fresh / பச்சை மிளகாய் - (adjust to your spice level)
- 10 gm Tamarind / புளி
- 1 tbsp Oil / எண்ணெய்
- 1 tsp Salt / உப்பு - (adjust to your taste)
for Tempering
- 1 tsp Oil / எண்ணெய்
- 1 tsp Mustard seed / கடுகு
- 1 pinch Asafoetida / பெருங்காயம்
Instructions
- Heat oil in a pan, add asparagus, sauté until tender
- Add green chili, red chili, channa dhal, urad dhal
- Fry about until dhal turns golden brown, allow it to cool
- Grind above into fine paste, do not add water as much as possible
Tempering
- Heat oil in the pan, add mustard, allow it to splutter
- Add asafoetida
- Mix well with the ground paste
Notes
Serve along with rotis and or hot rice
Variation
- You may consider adding grated coconut when frying asparagus mix
