Ingredients
  

  • 2 cup Basmati Rice / பாசுமதி அரிசி
  • 1 tsp Cumin seed / சீரகம்
  • 2 nos Onion / வெங்காயம் - long cut
  • 3 – 4 pod Garlic / பூண்டு - finely chopped
  • 1 inch Ginger / இஞ்சி - finely chopped
  • 2 tbsp Shahi Biriyani Masala
  • 2 – 3 nos Green Chili, Fresh / பச்சை மிளகாய் - chopped
  • 4 tbsp Ghee / நெய்
  • 2 – 3 tbsp Spring Onion - chopped (optional)
  • 2 tsp Salt / உப்பு - adjust to your taste
  • 1 tsp Cashew nut / முந்திரிப் பருப்பு - fried (optional)
  • 50 gm Paneer - fried

Instructions
 

  • Soak basmati rice for about 20min and drain water
  • Heat 2tbsp ghee in a pan
  • Splutter cumin in hot ghee
  • Saute spring onion for a min
  • Add long cut onion and saute for a min (reserve a few for garnishing)
  • Add ginger and garlic and fry well until raw smell goes off
  • Add green chilli and fry
  • Add rice into it and fry in simmer until rice turns opaque white
  • Add shahi biriyani masala
  • Add salt and mix well
  • Transfer the mix to a pressure cooker
  • Meanwhile heat remaining ghee
  • Fry remaining long cut onion in low flame until it turns brown and crispy
  • Once rice is cooked garnish the fried onion, paneer and cashew
  • Serve hot

Notes

Variation
* You could open cook but be careful not to break the rice while stirring
* Take part of cooked rice and fry with additional 1tbsp of ghee and garnish on top
