Bhajji
Bhajji or bhaji is a spicy Indian snack similar to pakora or potato fritters, with several variants. It is usually used as a topping on various Indian meals but has become popular to eat alone as a snack. -Source: wikipedia
Ingredients
- 1 cup Besan flour / கடலை மாவு
- ½ cu[ Rice flour / அசிரி மாவு
- 1 nos Potato / உருளைக் கிழங்கு - thinly sliced
- 2 nos Onion / வெங்காயம் - thinly sliced
- 1 nos Eggplant / கத்தரிக்காய் - thinly sliced
- 1 nos Capsicum / குடை மிளகாய் - thinly sliced
- 1 tsp Red Chili powder / மிளகாய்த் தூள்
- 1 tsp Cooking Soda
- 1 tsp Salt / உப்பு - adjust to taste
- 1 pinch Asafoetida / பெருங்காயம்
- Oil / எண்ணெய் - to fry

- Oil / எண்ணெய் - to fry
Instructions
- Mix besan, rice flour, red chilli powder salt, cooking soda, asafoetida and mix well
- Add 2tbsp of hot oil and water little by little and mix well without forming lumps
- Heat oil in a pan and once the oil is hot reduce to medium flame
- Dip thinly cut vegetables, such that it forms a cap around it and fry it until golden brown

Server hot with coconut chutney and/or ketchup Variations * Sprinkle little chat masala over bhajji before serving, this will boost the taste of the bhajji * Vegetables like long capsicum, raw banana, green chilli, cauliflower etc. could also be used to make bhajji
