Ingredients
  

  • 4 cup Wheat flour (atta)
  • 1 bunch Fenugreek leaves, Fresh / வெந்தயக் கீரை
  • 1 nos Onion / வெங்காயம் - cut into big pieces
  • 4 – 5 pod Garlic / பூண்டு
  • tsp Red Chili powder / மிளகாய்த் தூள்
  • 2 nos Green Chili, Fresh / பச்சை மிளகாய்
  • ½ tsp Turmeric powder / மஞ்சள் தூள்
  • 2 tsp Salt / உப்பு - adjust to your taste
  • 1 tsp Cumin powder / சீரகத் தூள்
  • 1 tsp Coriander powder / மல்லித் தூள்
  • 1 tsp Ajwain seed
  • ½ tsp Cumin seed / சீரகம்
  • 300 ml Oil / எண்ணெய் - to fry

Instructions
 

  • Heat 2tbsp of oil in a pan
  • Add jeera and allow it to splutter
  • Add onion, garlic, green chilli and saute until raw smell goes off
  • Add methi leaves and cook for 2min
  • Add Red chili powder, turmeric power, jeera powder, dhania powder, mix and cool for 2min
  • Allow it to cool
  • Grind the above mix into a fine paste without adding water
  • Add the ground paste, ajwain, salt to wheat flour and knead into a thick dough by adding water little by little
  • Split the dough into equal smaller pieces (lemon size should be fine)
  • Roll them into poori
  • Fry the poori in oil
  • Serve hot with a matching gravy
