Ingredients
  

for Pulav

  • 2 cup Basmati Rice / பாசுமதி அரிசி
  • 1 nos Onion / வெங்காயம் - long cut
  • ½ cup Cauliflower - cut into flowerets
  • ½ cup Green Peas, Fresh / பச்சைப் பட்டாணி
  • ½ cup Soy Beans
  • ½ cup French Beans, Fresh
  • 1 nos Potato / உருளைக் கிழங்கு - long cut
  • 1 nos Carrot / காரெட் - long cut
  • ½ cup Broccoli - cut into flowerets
  • 3 tsp Salt / உப்பு - adjust to your taste
  • 1 tsp Shahi Jeera
  • 1 nos Bay leaf, Dry
  • 1 tbsp Ghee / நெய்

for Masala

  • 4~5 pod Garlic / பூண்டு - randomly cut
  • 4 nos Green Chili, Fresh / பச்சை மிளகாய் - randomly cut, adjust to your spice level
  • 1 inch Ginger / இஞ்சி - randomly cut
  • 6~8 leaves Curry leaves, Fresh / கருவேப்பிலை
  • 1 cup Coconut, Fresh / தேங்காய் - grated
  • 1 nos Javithri
  • 4~6 nos Cloves / லவங்கம்
  • ½ tsp Black Pepper / மிளகு
  • 2 nos Cardamom, Green / ஏலக்காய்
  • 1 nos Cardamom, Black / ஏலக்காய்
  • ½ inch Cinnamon stick / லவங்கப் பட்டை
  • ½ nos Star Anise
  • 1 bunch Coriander leaves, Fresh / கொத்தமல்லி

Instructions
 

  • Grind all ingredients for masala into a fine paste
  • Heat ghee in a pan
  • Add bay leaf
  • Add shahi jeera
  • Add onion and fry until translucent
  • Add cashew nuts and fry a little
  • Add ground masala, mix well
  • Add beans, peas, soybeans, potato, carrot, cauliflower, broccoli
  • Add salt and mix well
  • Add rice and mix well
  • Add enough water and pressure cook for 2 whistles

Notes

Serve hot along with raita
