Puli Inji
Ingredients
- 2 tbsp Orange Peel / ஆரஞ்சுத் தோல் - Optional
- 50 gm Ginger / இஞ்சி - finely chopped
- 50 gm Green Chili, Fresh / பச்சை மிளகாய் - finely chopped
- 1 cup Tamarind extract / புளிக் கரைசல் - made from 1 big lemon size
- 1 tsp Turmeric powder / மஞ்சள் தூள்
- 2 tbsp Puli Inji Masala
- 50 gm Jaggery / வெல்லம்
- 2 tbsp Sesame Oil / நல்லெண்ணெய்
- 1 tsp Salt / உப்பு - adjust to your taste
- 1 pinch Asafoetida / பெருங்காயம்
- 1 bunch Curry leaves, Fresh / கருவேப்பிலை
Instructions
- Soak tamarind in warm water, squeeze and filter it, keep aside
- Heat oil in a pan
- Season little mustard, urad dhal, channa dhal, red chili
- Fry ginger and green chilies until the raw flavor vanishes
- Add orange peel and fry for 2min
- Add asafoetida, turmeric powder, filtered tamarind water and mix well
- Add salt and stir well and allow to boil in medium flame
- Add puli inji masala and stir well
- Add jaggery and mix well again allow it to boil
- Garnish with curry leaves
