Ingredients
  

  • 500 gm Gooseberry / நெல்லிக் காய்
  • 2~3 tsp Red Chili powder / மிளகாய்த் தூள் - adjust to your spice level
  • 1 tsp Turmeric powder / மஞ்சள் தூள்
  • 1 tsp Fenugreek powder / வெந்தையப் பொடி
  • 2 tsp Mustard seed / கடுகு
  • 1 pinch Asafoetida / பெருங்காயம்
  • 150~200 ml Sesame Oil / நல்லெண்ணெய்
  • 1 tsp Salt / உப்பு - adjust to your taste

Instructions
 

  • Pressure cook gooseberry and de-seed it
  • Grind/Smash the de-seeded gooseberry into a fine paste
  • Heat oil in a pan
  • Temper mustards, add turmeric powder, asafoetida
  • Add the ground paste and mix well
  • Add salt, red chili powder, fenugreek powder and mix well
  • Add remaining oil little by little and stir the paste continuously
  • Once the paste is cooked well, it will stop absorbing oil, stop adding further oil
  • Allow it to cool

Notes

  • Store in an airtight dry container
  • Store in a cool dry place
  • Never use damp spoon or spatula
