Ingredients
  

  • 500 gm Okra / வெண்டைக் காய்
  • 2 nos Onion / வெங்காயம் - chopped
  • 10 pod Garlic / பூண்டு - smashed
  • 2 nos Green Chili, Fresh / பச்சை மிளகாய் - long slit
  • 2 tsp Cumin seed / சீரகம்
  • 1 tsp Garam Masala powder
  • 1 tsp Red Chili powder / மிளகாய்த் தூள் - adjust to your spice level
  • 1 tsp Coriander powder / மல்லித் தூள்
  • 1 tsp Mango powder, Dry
  • 2 tbsp Oil / எண்ணெய்
  • ½ tsp Salt / உப்பு - adjust to your taste
  • 1 bunch Curry leaves, Fresh / கருவேப்பிலை
  • 1 bunch Coriander leaves, Fresh / கொத்தமல்லி - chopped

Instructions
 

  • Wash well and pat dry the bhindi
  • Cut the top and bottom parts and dispose of them
  • Cut each bhindi into 2 or 3 pieces depending on the size, and then each piece into 4 lengthwise slices
  • Heat 1tsp of oil in a pan
  • Add bhindi and fry until stickiness disappears, keep aside
  • Add rest of oil to the pan and heat
  • Add cumin seeds and crackle it
  • Add garlic, onion, green chili, curry leaves and fry until golden brown
  • Add the fried bhindi, garam masala powder, red chili powder, coriander powder, amchur powder, salt and mix well
  • Cook for 2~3min
  • Garnish with chopped coriander leaves
  • Serve hot
