Wash well and pat dry the bhindi
Cut the top and bottom parts and dispose of them
Cut each bhindi into 2 or 3 pieces depending on the size, and then each piece into 4 lengthwise slices
Heat 1tsp of oil in a pan
Add bhindi and fry until stickiness disappears, keep aside
Add rest of oil to the pan and heat
Add cumin seeds and crackle it
Add garlic, onion, green chili, curry leaves and fry until golden brown
Add the fried bhindi, garam masala powder, red chili powder, coriander powder, amchur powder, salt and mix well
Cook for 2~3min
Garnish with chopped coriander leaves
Serve hot
