Badam Halwa
Ingredients
- 100 gm Almond / பாதாம்
- 25 gm Cashew nut / முந்திரிப் பருப்பு
- 100 gm Sugar, White / சர்க்கரை, வெள்ளை
- 2 – 3 nos Cardamom, Green / ஏலக்காய்
- ½ – ¾ ltr Milk / பால்
- 250 – 300 gm Ghee / நெய்
- 10 strands Saffron / குங்குமப் பூ
Instructions
- Soak Badam in hot water for atleast 30min
- Soak chesew nut in preboiled cold milk
- Peal the skin off from Badam and add this skinless badam along with chesew nut
- Soak the mixture for atleast 4 hours in milk
- Grind the above soaked Badam, Cashew along with Cardamon
- Add milk for grinding instead of water
- Pour this grinded mixture to a cup
- Measure the mixture correctly and add equal amounts of sugar to it [This is very important]
- Pour the mixture and sugar in a pan
- Add Safroon to get the required color
- Constantly keep adding ghee and stir well. This process of stirring and adding ghee should continue till you get a consistency equal to that of a “dosa batter”
- The mixture should not stick to the vessel
- Once this consistency is achieved remove the mixture from flame and immediately transfer it to a box
- Allow it to cool for some time it would be fine
