Baingan Bharta
Ingredients
- 1 nos Eggplant, Big / கத்தரிக்காய் பெரியது
- 1 cup Onion / வெங்காயம் - finely chopped
- 2 cup Tomato / தக்காளி - finely chopped
- 10 nos Garlic / பூண்டு - finely chopped
- 1 inch Ginger / இஞ்சி - long thin cut
- 2 nos Green Chili, Fresh / பச்சை மிளகாய்
- 1 tsp Cumin seed / சீரகம்
- 1 tsp Turmeric powder / மஞ்சள் தூள்
- 2 tsp Red Chili powder / மிளகாய்த் தூள்
- 1 tsp Garam Masala powder
- 1 pinch Asafoetida / பெருங்காயம்
- 1 tsp Salt / உப்பு - adjust to your taste
- 3 tbsp Oil / எண்ணெய்
- 1 tbsp Ghee / நெய் - optional
- 1 bunch Coriander leaves, Fresh / கொத்தமல்லி
- 1 bunch Curry leaves, Fresh / கருவேப்பிலை
Instructions
- Roast eggplant over a medium flame until the eggplant is soft
- Remove the charred skin and mash it well, keep it aside
- Heat oil and ghee in a pan
- Temper cumin seeds
- Add garlic and sauté until raw smell vanishes
- Add onion, ginger, curry leaves, green chili and sauté until raw smell vanishes
- Add tomato and sauté until they are mushy
- Add salt, turmeric powder, red chili powder, asafoetida, garam masala powder and mix well
- Add 2~3tbsp of water and cook well in medium flame
- Once the above is well cooked, add mashed roasted egg plant and cook for another 5min
- Garnish with chopped coriander leaves

Serve hot with rotis or parathas
